This summer I’m working in Ecuador for about a month, so the next few posts will be about foods that I’m eating here. The first thing I wanted to post about is this delicious soup I first tasted when I was in Ecuador 2 years ago. I was in the Galapagos Islands and stopped at a hotel restaurant to have dinner. On the menu was a soup that I had to try because it sounded so delicious. It’s called locro de papa and reminds me of cream of potato soup but with cheese and avocado slices on top. I mean really, with those ingredients how can it not be good?

So when I returned to Ecuador this summer, locro de papa was the first thing I had to eat. I had it for dinner on my first night out in Quito and it was just as good as I remembered. Being reminded of how delicious it is I hope inspires me to make it when I get back to the US, but in the meantime, I’m going to try to eat it as much as possible while I’m here.
